If there are too many protons, some can turn into neutrons by beta decay, and vice versa.
A proton can change into a neutron by emitting a positron (beta plus), and a neutron can change into a proton by emitting an electron (beta minus).

I never really thought about it much, but just recently I realized that four protons fusing together should make beryllium, not helium. The reactions are detailed in proton-proton chain reaction and are too complex for me to fully explain here, but I'll try summarize. Two protons come together, and one proton is converted into a neutron (an up quark transforms into a down quark I believe).
